This is one of my mother's favorite recipes, in fact, she made a huge batch of it for her 90th birthday party and it was gone in a flash! It is easy to make as a lot of the ingredients are in cans. When I haven't had the canned beans that it calls for, I have just cooked up some yummy and healthful Pinto beans and proceeded with the rest of the recipe. I also have a container of 15 mixed varieties of beans that I have cooked and used in this recipe. The taste and texture is a little different than the original, but it is very good for you and very flavorful.
- 1 lb. bacon, cooked and broken into pieces about 3/4 inch long
- 1 lb. or more of hamburger, cooked and crumbled
- 1 medium onion, chopped
- 1/2 Cup catsup
- 1 tsp. prepared mustard
- 1/2 Cup brown sugar
- 1-1 lb. can butter beans
- 1-1 lb. can kidney beans
- 1 large can (or more) pork and beans
- 3 tbsp. vinegar
Mix all of the ingredients together in your cook pot and simmer for about an hour stirring often enough to keep it from sticking. It's really great if you can make this recipe the day before you need it and keep it in the refrigerator as it blends the flavors so well. (I was going to say yummily, but I guess that isn't a word...it should be, though).
I wonder if this could be bottled for food storage. I will try to find out how to do it and post my finding here.
